
Vegetarian diets can present its challenges on the road, because it’s already a limited diet in terms of what proteins are available. I’ve been a vegetarian for 8 years now, and find it does not inconvenience my cooking in the slightest when we are traveling. It does take a little more planning/prep at times because I cook non-vegetarian food for my friends and traveling partner. But, all in all, it’s not an inconvenience, and it is possible!
The purpose for this page is to direct you to some quick, easy, and ultimately nourishing recipes and meals that are my go-to’s when I am on the road and needing to whip up a meal for my vegetarian self!
